When it comes to choosing carrots for roasting, you have two main options: baby carrots or regular carrots. Baby carrots are often pre-cut and peeled, making them a convenient choice for quick meals. However, regular carrots can offer a deeper flavor profile and a firmer texture.

Garlic Parmesan Roasted Carrots

Ingredients
  

1 lb (450g) baby carrots (or regular carrots, cut into sticks)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

      Prepare the Carrots:

        If using regular carrots, peel them and cut them into sticks about 1/2 inch thick. If using baby carrots, they can be used whole.

          Season the Carrots:

            In a large mixing bowl, combine the olive oil, minced garlic, dried thyme, salt, and black pepper. Add the carrots to the bowl and toss them well in the mixture until they are evenly coated.

              Arrange on Baking Sheet:

                Spread the seasoned carrots in a single layer on the prepared baking sheet, ensuring they're spaced out for optimal roasting.

                  Roast the Carrots:

                    Roast the carrots in the preheated oven for about 20-25 minutes, stirring halfway through, until they are tender and slightly caramelized.

                      Add Parmesan:

                        After 20-25 minutes, remove the carrots from the oven and sprinkle the grated Parmesan cheese over the top. Return them to the oven for an additional 5 minutes or until the cheese is melted and bubbly.

                          Garnish and Serve:

                            Once done, remove the carrots from the oven and garnish with freshly chopped parsley. Serve warm alongside your favorite main dish.
