Ingredients

4 medium sweet potatoes, peeled and diced into 1-inch cubes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help achieve a beautifully caramelized exterior on the sweet potatoes.

Prep the Sweet Potatoes: In a large bowl, combine the diced sweet potatoes with olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper. Toss well to coat the sweet potatoes evenly with the seasoning mixture.

Arrange on Baking Sheet: Spread the seasoned sweet potatoes out in a single layer on a large baking sheet lined with parchment paper. Ensure that there’s some space between each piece for proper roasting.

Roast: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the sweet potatoes are tender and golden brown. Toss the sweet potatoes halfway through to ensure even cooking and browning.

Garnish and Serve: Once roasted, remove from the oven and sprinkle with fresh parsley for a pop of color and fresh flavor. Serve warm as a delightful side dish or a nutritious snack!
