Ingredients

For the Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon olive oil

Optional: a pinch of red pepper flakes for heat

For the Potatoes:

1 lb baby potatoes, halved (or quartered if large)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Potatoes:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

        - Spread the potatoes in a single layer on a baking sheet lined with parchment paper.

          - Bake in the preheated oven for 25-30 minutes or until they are golden and crispy, flipping them halfway through for even cooking.

            Sear the Steak Bites:

              - While the potatoes are baking, pat the steak cubes dry with paper towels and season generously with salt and pepper.

                - Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

                  - Once the oil is shimmering, add the steak bites in a single layer. Avoid overcrowding the skillet; you might need to do this in batches.

                    - Sear the steak bites for about 2-3 minutes without moving them. Flip to the other side and cook for another 2 minutes for medium-rare, adjusting the time based on your desired doneness.

                      Add Garlic Butter:

                        - Reduce the heat to medium. Push the steak bites to one side of the skillet, add the butter, minced garlic, thyme, rosemary, and red pepper flakes (if using) to the other side.

                          - Let the garlic cook for about 30 seconds until fragrant, then stir everything together, allowing the garlic butter to coat the steak bites. Cook for an additional minute.

                            Combine and Serve:

                              - Once the potatoes are done cooking, remove them from the oven and transfer to the skillet with the steak bites. Toss everything together gently to combine.

                                - Garnish with fresh parsley before serving.

                                  Enjoy:

                                    - Serve warm, allowing guests to enjoy the flavorful garlic butter steak bites with the crispy potatoes.
