Ingredients

1 lb sirloin steak, cut into 1-inch cubes

3 tbsp unsalted butter

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or ½ tsp dried rosemary)

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

Salt and pepper to taste

1 tbsp olive oil

Fresh parsley, chopped for garnish

Instructions

Prepare the Steak: Season the cubed sirloin steak generously with salt and pepper. Allow it to sit for about 15 minutes at room temperature to ensure even cooking.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

Sear the Steak: Add the steak bites in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side, or until they are browned and cooked to your desired level of doneness. Avoid overcrowding the pan to get a nice sear.

Add Garlic and Herbs: Reduce the heat to medium and push the steak bites to one side of the skillet. Add the butter, minced garlic, rosemary, and thyme to the empty side of the skillet. Let the butter melt and the garlic become fragrant (about 1-2 minutes), stirring occasionally.

Toss Everything Together: Once the butter is melted and the garlic is fragrant, toss the steak bites in the garlic butter mixture, ensuring they are well coated. Cook for another minute to let the flavors meld.

Garnish and Serve: Remove the skillet from heat and toss in the chopped parsley. Serve immediately, spooning any remaining garlic butter from the pan over the steak bites for added flavor.
