Ingredients

1 pound (450g) of medium carrots, peeled and cut into fry shapes

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus more for garnish)

1 teaspoon smoked paprika

½ teaspoon sea salt

½ teaspoon black pepper

Optional: 1 tablespoon Parmesan cheese, grated (for a cheesy twist)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will ensure your carrot fries come out crispy.

Prepare the Carrots: In a mixing bowl, toss the cut carrot fries with melted butter until they are evenly coated.

Add Flavors: Stir in the minced garlic, chopped parsley, smoked paprika, sea salt, and black pepper. If you’re adding Parmesan, mix that in as well. Ensure each fry is well-coated in the buttery seasoning.

Arrange on Baking Sheet: Spread the carrot fries out on a large baking sheet in a single layer. Make sure they are not overcrowded to ensure even roasting.

Roast the Carrot Fries: Place the baking sheet in the preheated oven and roast for 20-25 minutes. Halfway through the cooking time, take them out and flip the fries for even browning.

Check for Doneness: The carrot fries are done when they are tender on the inside and have a crispy exterior. If you desire extra crispness, broil them for an additional 2-3 minutes, watching closely to avoid burning.

Serve and Garnish: Remove the fries from the oven and let them cool slightly. Garnish with additional chopped parsley if desired. Serve warm alongside your favorite dipping sauce or enjoy them as a tasty snack on their own!
