1 pound (450g) of large portobello mushrooms, cleaned and stems removed

1/2 cup (115g) unsalted butter

4 cloves of garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon sea salt

1/2 teaspoon black pepper

2 tablespoons balsamic vinegar

1 teaspoon lemon juice

Prepare the Butter Mixture: In a small saucepan over low heat, melt the unsalted butter. Once melted, add the minced garlic, and sauté gently for about 2 minutes until fragrant, making sure not to burn the garlic.

    Add Herbs: Stir in the chopped parsley, thyme, sea salt, pepper, balsamic vinegar, and lemon juice. Mix well and set aside to cool slightly.

      Marinate the Mushrooms: Place the cleaned portobello mushrooms in a large bowl. Pour about three-quarters of the garlic butter mixture over the mushrooms, ensuring they are well-coated. Let them marinate for at least 15 minutes at room temperature to absorb the flavors.

        Preheat the Grill: While the mushrooms are marinating, preheat your grill to medium-high heat (around 400°F or 200°C).

          Grill the Mushrooms: Once heated, place the marinated mushrooms on the grill, gill side down. Grill for about 5-6 minutes. Then carefully flip them over and brush with the remaining garlic butter mixture. Continue to grill for an additional 4-5 minutes, or until tender and slightly charred.

            Serve: Remove the mushrooms from the grill and let them rest for a minute. Then, slice and serve warm, drizzling any leftover garlic butter over the top for added flavor.
