Ingredients

1 pound fresh green beans, trimmed

4 tablespoons unsalted butter

3 cloves garlic, minced

1/2 cup sliced almonds

1 tablespoon fresh lemon juice

Zest of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanch them for 3-4 minutes until they are bright green and tender-crisp. Drain and immediately plunge them into an ice bath to stop the cooking process. Once cooled, drain again and set aside.

Toast the Almonds: In a large skillet over medium heat, add the sliced almonds. Toast them, stirring frequently, until they are golden brown and fragrant (about 3-5 minutes). Remove from the skillet and set aside.

Make the Garlic Butter: In the same skillet, melt the butter over medium heat. Once melted, add the minced garlic and cook for about 1 minute, stirring constantly to prevent burning.

Combine Ingredients: Add the blanched green beans to the skillet with the garlic butter. Sauté for 2-3 minutes, ensuring the beans are well coated.

Season and Finish: Remove the skillet from heat and stir in the toasted almonds, lemon juice, and lemon zest. Season with salt and pepper to taste.

Serve: Transfer the garlic butter green bean almondine to a serving dish and garnish with freshly chopped parsley. Enjoy while warm!
