Garlic Butter Chickpea & Spinach Toasts

1 can (15 oz) chickpeas, drained and rinsed

2 cups fresh spinach, chopped

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust to taste)

Salt and black pepper to taste

8 slices of sourdough or whole grain bread

1 tbsp lemon juice

Fresh basil or parsley for garnish (optional)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Chickpeas: In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add the Chickpeas: Stir in the chickpeas, oregano, red pepper flakes, salt, and pepper. Cook for about 5-7 minutes, occasionally mashing some chickpeas with the back of a spoon until you have a mix of creamy and whole chickpeas. Stir in the lemon juice and remove from heat.

      Sauté the Spinach: In a separate pan, melt the remaining 2 tablespoons of butter over medium heat. Add the chopped spinach and a pinch of salt. Cook until wilted (about 2-3 minutes), stirring often.

        Combine Chickpeas and Spinach: Gently fold the sautéed spinach into the chickpea mixture, combining well. Adjust the seasoning as needed.

          Toast the Bread: While the chickpea-spinach mixture is cooking, preheat your oven's broiler. Arrange the slices of bread on a baking sheet and place under the broiler for about 1-2 minutes per side, or until golden and crispy.

            Assemble the Toasts: Once toasted, spoon the garlic butter chickpea and spinach mix generously onto each slice of bread.

              Garnish and Serve: Top with fresh basil or parsley if desired, and if you enjoy cheese, sprinkle with grated Parmesan. Serve immediately while the toast is warm and crispy.
