Ingredients
  

2 medium zucchinis, spiralized

2 boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

Fresh basil leaves, for garnish

1 tablespoon olive oil

Instructions
 

Prepare the Zucchini Noodles:

    Using a spiralizer, spiralize the zucchinis to create zoodles (zucchini noodles). Set aside.

      Cook the Chicken:

        In a large skillet over medium heat, heat the olive oil. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook for about 6-8 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

          Make Garlic Butter:

            In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but be careful not to burn it.

              Combine Ingredients:

                Return the cooked chicken to the skillet. Add the spiralized zucchini and cherry tomatoes, and toss to combine. Cook for about 3-4 minutes, just until the zucchini has softened slightly but still has a bit of crunch.

                  Finish and Serve:

                    Remove from heat and sprinkle with Parmesan cheese. Toss to combine and melt the cheese slightly. Adjust seasoning with salt and pepper if necessary.
