1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) pasta (fettuccine or linguine recommended)

4 tbsp unsalted butter

3 cloves garlic, minced

1 tsp red pepper flakes (adjust for spice level)

1 tbsp fresh lemon juice

Salt and pepper, to taste

1/2 cup (120ml) chicken broth

1/4 cup (60ml) heavy cream

1/2 cup grated Parmesan cheese, plus extra for serving

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Once melted, add the chicken bites and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is browned and cooked through.

      Add Aromatics: Push the chicken to one side of the skillet, add the remaining 2 tablespoons of butter to the empty side, and then add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

        Combine and Simmer: Pour in the chicken broth and bring to a simmer. Stir the chicken back into the mixture. Reduce heat to low and add the heavy cream, lemon juice, and Parmesan cheese. Stir until well combined and creamy.

          Toss with Pasta: Add the cooked pasta to the skillet, tossing it with the chicken and sauce. If the mixture appears too thick, gradually add reserved pasta water until reaching the desired consistency.

            Garnish and Serve: Sprinkle chopped parsley on top for freshness, and serve immediately with additional Parmesan cheese on the side.
