Garlic Bread Grilled Cheese Sandwich

Ingredients
  

4 slices of thick sourdough bread

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper, to taste

Optional: pinch of red pepper flakes for heat

Prepare the Garlic Butter: In a small mixing bowl, combine the softened butter, minced garlic, dried parsley, salt, pepper, and red pepper flakes (if using). Mix until well combined and set aside.

    Assemble the Sandwich: Take two slices of sourdough bread and spread a generous layer of the garlic butter on one side of each slice. On the unbuttered side of one slice, layer half of the shredded cheddar and mozzarella cheeses. Top with the other slice of bread, buttered side facing up. Repeat with the remaining bread and cheese to create the second sandwich.

      Heat the Pan: Preheat a non-stick skillet or griddle over medium-low heat. Ensure the pan is hot enough but not smoking to gently toast the bread without burning.

        Cook the Sandwich: Place one sandwich on the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt. Carefully flip the sandwich and cook the other side for another 3-4 minutes until golden brown and crispy.

          Melt the Cheese: If the cheese hasn’t fully melted, you can cover the skillet with a lid for a minute to trap heat, ensuring the cheese gets perfectly gooey.

            Slice and Serve: Remove the grilled cheese sandwich from the skillet and let it rest for a minute. Cut it diagonally and serve warm with a side of marinara sauce for dipping, if desired.
