Funfetti Cheesecake Cake

For the funfetti cake:

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup buttermilk

¾ cup rainbow sprinkles (plus extra for topping)

For the cheesecake layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

¼ cup all-purpose flour

For the frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

2 tbsp heavy cream

1 tsp vanilla extract

Rainbow sprinkles for decoration

Instructions
 

Prepare the Funfetti Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

        - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

          - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            - Gradually add the flour mixture to the wet ingredients, alternating with buttermilk until just combined.

              - Gently fold in the rainbow sprinkles. Divide the batter evenly between the prepared cake pans.

                - Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow cooling in the pans for 10 minutes, then turn out onto wire racks to cool completely.

                  Prepare the Cheesecake Layer:

                    - Reduce the oven temperature to 325°F (160°C). Line a 9-inch springform pan with parchment paper.

                      - In a large bowl, beat the softened cream cheese and sugar together until smooth.

                        - Mix in the vanilla extract, followed by adding the eggs one at a time, ensuring that each is fully incorporated.

                          - Finally, stir in the flour until just combined. Pour the cheesecake batter into the prepared springform pan.

                            - Bake in the preheated oven for 40-45 minutes, or until the edges are set and the center has a slight jiggle. Remove and let it cool to room temperature before refrigerating for at least 4 hours (or overnight).

                              Prepare the Frosting:

                                - In a large bowl, beat the softened butter until smooth and creamy. Add powdered sugar gradually, mixing on low speed.

                                  - Pour in heavy cream and vanilla extract, and beat on high speed until the frosting is light and fluffy.

                                    Assemble the Cake:

                                      - Once the cake layers and cheesecake layer are completely cool, place one funfetti cake layer on a serving plate. Top it with the chilled cheesecake layer, and then add the second funfetti layer on top.

                                        - Spread the frosting evenly on the top and sides of the assembled cake, smoothing it out as desired.

                                          - Finish off by generously sprinkling extra rainbow sprinkles on top of the frosted cake for that Funfetti look!
