Ingredients

1 cup strawberries, chopped (fresh or frozen)

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 cup plain Greek yogurt (frozen or fresh)

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

1/2 cup white chocolate chips (optional, for drizzle)

Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease or line a muffin ring pan with parchment paper.

Prepare Strawberries: If using frozen strawberries, ensure they are thawed and well-drained to avoid excess liquid. Chop the strawberries into smaller pieces and set aside.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the melted butter, Greek yogurt, eggs, vanilla extract, and almond extract. Stir until the mixture is smooth and well blended.

Create the Batter: Gradually add the wet ingredients to the dry ingredients, stirring gently. Fold in the chopped strawberries, but be careful not to overmix.

Fill Muffin Rings: Using a ladle or spoon, divide the batter evenly among the muffin rings, filling each about 3/4 full.

Bake: Place the muffin ring pan in your preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin ring comes out clean.

Cool and Drizzle: Once baked, remove from the oven and let the muffin rings cool in the pan for about 5 minutes. Transfer to a wire rack to cool completely. If desired, melt white chocolate chips in the microwave and drizzle over the cooled muffin rings.

Serve: Enjoy your Frozen Yogurt Strawberry Muffin Rings warm or at room temperature. These are perfect as a breakfast treat or a delightful snack!
