Ingredients

2 cups fresh strawberries, hulled

1 cup plain Greek yogurt

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup mini marshmallows

1 cup dark chocolate chips or melting chocolate

1 tablespoon coconut oil (optional, for smooth chocolate)

Sprinkles or crushed nuts for garnish (optional)

Instructions

Prepare the Strawberries:

    - Rinse the strawberries under cold water and remove the green tops. Pat them dry with a paper towel.

      Make the Yogurt Mixture:

        - In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir well until smooth and evenly mixed.

          Assemble the Pops:

            - Dip each strawberry into the yogurt mixture, ensuring it's fully coated. Use a skewer or toothpick to hold the strawberry for dipping.

              - After dipping, place the yogurt-covered strawberries on a parchment-lined baking sheet.

                Add Mini Marshmallows:

                  - Before the yogurt sets, gently press a few mini marshmallows onto the top of each yogurt-covered strawberry.

                    Freeze the Pops:

                      - Transfer the baking sheet to the freezer and let the pops freeze for about 2 hours, or until the yogurt is firm.

                        Melt the Chocolate:

                          - In a microwave-safe bowl, combine dark chocolate chips and coconut oil (if using). Heat in the microwave in 30-second intervals, stirring in between, until fully melted and smooth.

                            Coat the Pops:

                              - Once the strawberries are frozen, dip each yogurt-covered pop into the melted chocolate, allowing excess to drip off.

                                Garnish and Freeze Again:

                                  - Immediately sprinkle the melted chocolate with sprinkles or crushed nuts if desired, and place them back onto the baking sheet. Return to the freezer and freeze for an additional 30 minutes.

                                    Serve and Enjoy:

                                      - Once fully set, your Frozen Yogurt Strawberry Marshmallow Pops are ready! Remove them from the freezer, and enjoy as a refreshing treat!
