2 cups Greek yogurt (plain or flavored)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 ½ cups granola or crushed graham crackers

1 cup fresh fruit (sliced strawberries, bananas, or blueberries)

1 cup mini chocolate chips or dark chocolate shavings (optional)

12 large cookies (store-bought or homemade, like chocolate chip or oatmeal)

Instructions
 

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well blended and smooth.

    Mix In Add-Ins: Fold in your choice of fresh fruit and, if desired, mini chocolate chips or dark chocolate shavings to add a little extra deliciousness.

      Assemble the Sandwiches: Place a large spoonful of the yogurt mixture onto the flat side of a cookie. Top with another cookie, pressing gently until the mixture spreads out slightly. Repeat with the remaining cookies and yogurt mixture.

        Coat the Edges: Roll the edges of each sandwich in granola or crushed graham crackers to give it a crunchy texture and extra flavor.

          Freeze: Place the assembled sandwiches on a parchment-lined baking sheet. Cover with plastic wrap and freeze for at least 2 hours, or until the yogurt is firm.
