For the Brownie Base:

1 cup (120g) all-purpose flour

1/2 cup (50g) unsweetened cocoa powder

1 cup (200g) granulated sugar

1/2 cup (115g) unsalted butter, melted

2 large eggs

1 tsp vanilla extract

1/4 tsp salt

For the Raspberry Yogurt Layer:

2 cups (480ml) plain Greek yogurt (or your favorite flavored yogurt)

1/2 cup (60g) fresh raspberries (plus extra for garnish)

2 tbsp honey or maple syrup (optional, for sweetness)

1 tsp vanilla extract

For finishing:

Dark chocolate chips or melted chocolate for drizzling (optional)

Instructions
 

Prepare the Brownie Base:

    - Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang to make removing the brownies easier.

      - In a mixing bowl, combine the melted butter and sugar, stirring until smooth. Then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        - In another bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, folding until just combined. Do not overmix!

          - Pour the brownie batter into the prepared pan and spread it evenly. Bake for 20-25 minutes until a toothpick comes out with a few moist crumbs (not wet batter). Allow to cool completely in the pan.

            Prepare the Raspberry Yogurt Layer:

              - In a medium bowl, gently mash the fresh raspberries with a fork. Mix in the Greek yogurt, honey (if using), and vanilla extract until well combined but still slightly chunky with raspberry bits.

                Assemble the Discs:

                  - Once the brownies are completely cooled, remove them from the pan using the parchment paper overhang. Cut into circles using a round cookie cutter (or a glass) to create disc shapes.

                    - Place half of the brownie discs on a serving platter or baking sheet. Spoon a generous amount of the raspberry yogurt mixture onto each brownie disc, spreading it evenly. Top each with a second brownie disc to form a “sandwich.” Use the remaining yogurt to dollop onto the tops for an extra touch if desired.

                      Freeze:

                        - Place the layered brownie discs in the freezer for at least 2-3 hours, or until frozen solid.

                          Serve:
