2 cups fresh raspberries (you can also use frozen if fresh are unavailable)

2 tablespoons honey or maple syrup (adjust based on raspberry sweetness)

1 ½ cups plain Greek yogurt (or your favorite flavored yogurt)

½ cup heavy cream (or coconut cream for a dairy-free version)

1 teaspoon vanilla extract

Pinch of salt

¼ cup granola or crushed nuts (for added texture, optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Raspberries: In a medium bowl, gently mash the raspberries with a fork. Add honey or maple syrup to the bowl and stir until combined. Set aside to let the flavors meld.

    Mix the Yogurt Base: In another mixing bowl, combine the Greek yogurt, heavy cream, vanilla extract, and a pinch of salt. Whisk until everything is well blended and creamy.

      Layer the Mixtures: Prepare a 9x5 inch loaf pan by lining it with parchment paper, leaving some overhang for easy removal later. Pour half of the yogurt mixture into the bottom of the prepared pan, smoothing it out evenly.

        Add the Raspberry Layer: Spoon the mashed raspberries over the yogurt layer, spreading it evenly. You can leave some chunks of raspberries for texture.

          Top with Remaining Yogurt: Gently pour the remaining yogurt mixture over the raspberries, ensuring it covers them completely. Use a spatula to smooth the top.

              Freeze: Cover the pan with plastic wrap or foil and place it in the freezer. Freeze for at least 4-5 hours, or until fully solid.
