Ingredients

1 cup Greek yogurt (plain or vanilla)

1/2 cup pumpkin puree (canned or freshly made)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ginger powder

1/4 teaspoon ground cloves

1/2 cup almond flour (or all-purpose flour for a different texture)

1/4 cup mini chocolate chips or chopped nuts (optional for topping)

Instructions

Mix the Base: In a medium mixing bowl, combine the Greek yogurt, pumpkin puree, honey (or maple syrup), and vanilla extract. Whisk until the mixture is smooth and well combined.

Add the Spices: Sprinkle in the cinnamon, nutmeg, ginger, and cloves. Stir the mixture until the spices are evenly distributed throughout.

Incorporate the Flour: Gradually add the almond flour to the mixture while stirring continuously until fully combined. This will give texture to the donut bites.

Prepare the Mold: Lightly grease a donut bite pan or silicone mold with non-stick spray to prevent sticking.

Fill the Molds: Spoon the pumpkin yogurt mixture into the molds, filling each cavity almost to the top. If you’re using chocolate chips or nuts, sprinkle some on top of each filled mold for added texture and flavor.

Freeze: Place the mold in the freezer and allow the donut bites to freeze for at least 4 hours or until solid.

Unmold and Serve: Once frozen, gently pop the donut bites out of the mold. You can serve them immediately or keep them stored in an airtight container in the freezer for up to 2 weeks.

Garnish (Optional): For an extra touch, consider drizzling with chocolate or a sprinkle of powdered sugar right before serving.
