Ingredients

For the Frozen Yogurt:

2 cups plain Greek yogurt

1 cup pure pumpkin puree

1/2 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

Pinch of salt

For the Crumble Topping:

1 cup rolled oats

1/2 cup almond flour (or whole wheat flour)

1/4 cup brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup coconut oil or unsalted butter, melted

1/2 cup chopped walnuts or pecans (optional)

1/4 cup dried cranberries or raisins (optional)

Instructions

Prepare the Frozen Yogurt Mixture:

    - In a large mixing bowl, combine Greek yogurt, pumpkin puree, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt. Whisk until smooth and well combined.

      Freeze the Yogurt:

        - Pour the yogurt mixture into ice cream molds or silicone cupcake liners. Alternatively, you can place it in a shallow dish for easier scoopability. Cover with plastic wrap or a lid and freeze for about 4-6 hours, or until firm.

          Prepare the Crumble Topping:

            - In another mixing bowl, combine rolled oats, almond flour, brown sugar, ground cinnamon, and salt. Stir in the melted coconut oil (or butter) until the mixture is evenly moistened.

              - If using, fold in the chopped nuts and dried fruit.

                Bake the Crumble:

                  - Preheat your oven to 350°F (175°C). Spread the crumble mixture onto a baking sheet lined with parchment paper. Bake for 10-15 minutes, stirring halfway through, until golden brown and fragrant. Remove from oven and let it cool completely.

                    Assemble the Cups:

                      - Once the frozen yogurt is firm, remove it from the molds (if using individual molds). If you used a shallow dish, scoop the yogurt into serving cups. Top each cup generously with the crumb topping.

                        Serve:

                          - Serve immediately or return to the freezer briefly if it has softened. Enjoy your frozen yogurt pumpkin crumble cups as a delightful fall-themed treat!
