Ingredients

1 cup Greek yogurt (plain or vanilla)

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (optional for drizzling)

Mini cupcake liners

Instructions

In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and sea salt. Stir until the mixture is smooth and well combined.

Line a mini muffin tin with mini cupcake liners.

Spoon about 1 tablespoon of the yogurt-peanut butter mixture into each liner, filling them about 3/4 full.

If desired, sprinkle some dark chocolate chips on top of each cup for added flavor.

Gently tap the muffin tin on the counter to remove any air bubbles and ensure an even distribution of the mixture.

Place the muffin tin in the freezer for at least 2-3 hours or until the cups are fully frozen.

Once frozen, carefully peel away the cupcake liners to reveal your delicious Peanut Butter Cups.

Drizzle with melted dark chocolate if desired, and return to the freezer for an additional 30 minutes to set the chocolate.

Serve immediately or store in an airtight container in the freezer for up to two weeks!
