To create perfectly shaped oatmeal cookies for your Frozen Yogurt Oatmeal Sandwich Bites, start by using a cookie scoop or a tablespoon to portion out the dough. This ensures uniformity in size and shape, which is essential for even layering when assembling the sandwiches. Aim for a cookie diameter of about 2 to 3 inches.

Ingredients

For the Oatmeal Cookies:

1 cup rolled oats

1/2 cup whole wheat flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup coconut oil (melted)

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

For the Frozen Yogurt Filling:

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup fruit of choice (e.g., strawberries, blueberries, mashed bananas)

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

      Make the Oatmeal Cookie Dough:

In a large mixing bowl, combine rolled oats, flour, baking powder, baking soda, salt, and cinnamon. In another bowl, whisk together melted coconut oil, brown sugar, honey, egg, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, mixing until combined. Fold in chocolate chips if using.

          Shape the Cookies:

Use a tablespoon to scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly to form even cookies.

              Bake the Cookies:

Bake in the preheated oven for 10-12 minutes or until the edges are golden. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                  Prepare the Frozen Yogurt Filling:

In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir in your choice of fruit until well incorporated.

                      Assemble the Sandwich Bites:

Once the oatmeal cookies are completely cooled, spread about 1 tablespoon of the yogurt mixture on the flat side of one cookie. Top with another cookie, flat side down, creating a sandwich. Repeat with the remaining cookies and filling.

                          Freeze the Sandwich Bites:

Place the assembled sandwiches on a baking sheet and freeze for at least 2 hours or until firm.

                              Serve:

Once frozen, you can enjoy these delightful bites straight from the freezer or let them sit for a minute to soften slightly before eating!
