Ingredients

2 cups plain Greek yogurt

1 cup brewed espresso or strong coffee, cooled

1/4 cup cocoa powder

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips

1/4 cup crushed nuts (walnuts or almonds)

1/2 cup mini chocolate-covered espresso beans (optional)

Instructions

Blend the Base: In a large bowl, whisk together Greek yogurt, cooled coffee, cocoa powder, honey (or maple syrup), vanilla extract, and sea salt until completely smooth and well combined. Taste and adjust sweetness as needed.

Add Mix-Ins: Gently fold in the dark chocolate chips and crushed nuts until evenly distributed throughout the yogurt mixture. If using, add mini chocolate-covered espresso beans for an extra coffee kick.

Prepare the Clusters: Using a tablespoon or small ice cream scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet or tray. Flatten each scoop slightly to create clusters.

Freeze: Place the tray in the freezer and freeze for at least 4-6 hours or until the clusters are completely solid.

Store: Once frozen, transfer the clusters to an airtight container, separating layers with parchment paper if needed, and keep them in the freezer for up to 2 months.

Serve: When ready to enjoy, simply take out the desired number of clusters and let them sit for a few minutes to soften slightly. Enjoy as a refreshing snack or dessert!
