For the Cookie Dough Layer:

1 cup almond flour

1/4 cup coconut flour

1/4 cup maple syrup

1/4 cup creamy almond butter or peanut butter

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/3 cup dark chocolate chips

For the Matcha Yogurt Layer:

2 cups plain Greek yogurt (or dairy-free yogurt)

1/4 cup honey or agave syrup (adjust for sweetness)

2 tablespoons matcha powder

1 teaspoon vanilla extract

A pinch of sea salt

For Topping:

2 tablespoons white chocolate chips (optional)

Extra matcha powder for dusting

Prepare the Cookie Dough Layer:

    In a mixing bowl, combine the almond flour, coconut flour, maple syrup, almond butter, vanilla extract, and sea salt. Stir until a thick dough forms. Fold in the dark chocolate chips.

      Line a Baking Dish:

        Line an 8x8 inch (20x20 cm) square baking dish with parchment paper, leaving some overhang for easier removal later.

          Press the Cookie Dough:

            Press the cookie dough mixture evenly into the bottom of the prepared baking dish. Use your fingers or the back of a spoon to create an even layer. Place the dish in the freezer while you prepare the yogurt layer.

              Prepare the Matcha Yogurt Layer:

                In a large bowl, whisk together the Greek yogurt, honey (or agave syrup), matcha powder, vanilla extract, and a pinch of sea salt until smooth and well combined.

                  Assemble the Bars:

                    Remove the baking dish from the freezer. Pour the matcha yogurt mixture over the cookie dough layer, spreading it evenly with a spatula.

                      Add Toppings:

                        Sprinkle the white chocolate chips on top, if using, and dust lightly with extra matcha powder for decoration.

                          Freeze:

                            Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer for at least 3-4 hours or until completely set.

                              Slice and Serve:

                                Once frozen, lift out the bars using the parchment overhang and cut them into squares or rectangles. Allow them to sit at room temperature for a few minutes before serving for easier cutting.

                                  Store:

                                    Store any leftovers in an airtight container in the freezer for up to 2 weeks.
