Ingredients

1 ½ cups plain Greek yogurt

1/4 cup honey or maple syrup

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1 cup almond flour

1/4 cup finely chopped almonds (for coating)

1/2 cup white chocolate chips (optional, for drizzling)

Sea salt, a pinch (optional)

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract. Mix well until smooth and fully incorporated.

Incorporate Almond Flour: Gradually add the almond flour to the yogurt mixture, stirring until the mixture is thick and holds together. If it's too sticky, add a little more almond flour until you can easily handle it.

Form the Truffles: Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the truffles onto a baking tray lined with parchment paper.

Coat the Truffles: Roll each truffle in the finely chopped almonds, ensuring an even coating. Return them to the parchment-lined tray.

Freeze the Truffles: Place the tray in the freezer for at least 2-3 hours, or until the truffles are firm.

Optional White Chocolate Drizzle: If using, melt the white chocolate chips in a microwave or double boiler. Drizzle the melted chocolate over the frozen truffles once they are firm. For a finishing touch, sprinkle a tiny pinch of sea salt on top of the drizzle.

Store and Enjoy: Transfer the truffles to an airtight container. They can be stored in the freezer for up to 2 weeks. Whenever you're ready to enjoy, simply take out a few truffles and let them sit at room temperature for a few minutes before savoring the deliciousness!
