Ingredients

1 cup Greek yogurt (plain or vanilla)

1 large apple, peeled and finely chopped (Granny Smith or Honeycrisp recommended)

1/2 cup honey

1/2 teaspoon cinnamon

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour (or whole wheat for a healthier option)

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions

Prepare the Muffin Disks: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with muffin liners or lightly grease them.

Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, honey, vanilla extract, and chopped apple. Stir until well mixed.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, flour, baking powder, baking soda, salt, and cinnamon.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chopped nuts and raisins or cranberries for added texture and flavor.

Spoon into Muffin Tins: Evenly distribute the batter into the prepared muffin tins, filling each one about 2/3 full to allow for rising during baking.

Bake: Place in the preheated oven and bake for 18-20 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

Cool and Freeze: Once baked, allow the muffin disks to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. After cooling, place the disks on a parchment-lined baking tray and freeze for at least 2 hours, or until completely solid.

Serving Suggestion: To serve, you can enjoy these delicious muffin disks straight from the freezer, or allow them to thaw for a few minutes for a softer texture. Drizzle with additional honey if desired!
