Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup fresh figs, chopped (about 8-10 figs)

1/4 cup honey (plus extra for drizzling)

1/2 teaspoon vanilla extract

1/4 cup almond flour (optional, for added texture)

1/4 teaspoon sea salt

2 tablespoons lemon juice

1/4 cup chopped nuts (walnuts or pistachios, optional)

Fresh mint leaves for garnish (optional)

Instructions

Prep the Figs: Start by washing and chopping the figs into small pieces. Set aside a few slices for garnish if desired.

Combine Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey, vanilla extract, lemon juice, and sea salt. Stir until well mixed.

Add Fig and Nuts: Gently fold in the chopped figs and almond flour into the yogurt mixture. If using, also add the chopped nuts and mix until all ingredients are evenly distributed.

Prepare the Pan: Line a 9x5 inch loaf pan with parchment paper, allowing some overhang for easy removal later.

Pour and Spread: Pour the yogurt and fig mixture into the lined pan. Spread it out evenly with a spatula.

Freeze: Cover the pan with plastic wrap and place it in the freezer for at least 4 hours or until firm.

Cut into Bars: Once frozen, remove the frozen yogurt from the pan using the parchment paper overhang. Place it on a cutting board and cut it into bars of your desired size.

Serve: Drizzle the bars with additional honey and garnish with fresh fig slices and mint leaves if using. Enjoy your refreshing bars immediately or return them to the freezer until serving.
