1 cup rolled oats

1/2 cup almond flour

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup mini chocolate chips

1 cup Greek yogurt (preferably non-fat or low-fat)

1/4 cup sweetener of choice (if desired, adjust based on yogurt tartness)

Toppings: crushed nuts, shredded coconut, or additional chocolate chips (optional)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, and salt. Stir well to ensure the dry ingredients are evenly mixed.

    Combine Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

      Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Mix until well combined. If the mixture feels too crumbly, add a splash of water or additional honey/maple syrup to help bind it together.

        Add Chocolate Chips: Gently fold in the mini chocolate chips into the dough. You can reserve a few for topping later if you’d like.

          Shape the Bites: Using your hands, scoop out small portions of the dough and roll them into small balls (about 1 inch in diameter). Place each ball on a parchment-lined baking tray.

            Prepare Yogurt Coating: In a small bowl, stir the Greek yogurt and sweetener (if using) until smooth.
