2 cups plain Greek yogurt

1 cup full-fat coconut milk

1/2 cup honey or maple syrup (adjust based on sweetness preference)

1 tsp vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup shredded unsweetened coconut

1 tbsp lemon juice

Pinch of salt

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt. Whisk together until smooth and well-blended.

    Swirl in the Berries: In a separate bowl, mash the mixed berries with a fork and stir in the lemon juice. This will create a vibrant berry compote.

      Combine and Swirl: Take about half of the yogurt mixture and layer it into a parchment-lined baking dish (approximately 9x9 inches). Spoon half of the berry mixture over the yogurt base. Use a knife or skewer to create swirls. Repeat this process with the remaining yogurt and berry mixes, gently swirling until you have a marbled effect.

        Add Coconut: Sprinkle the shredded coconut evenly on top of the mixed yogurt and berry swirl.

          Freeze: Cover the baking dish with plastic wrap or a lid and place it in the freezer. Let it freeze for at least 4-6 hours, or until completely set.

            Slice and Serve: Once frozen, remove the dish from the freezer and let it sit for a few minutes to soften slightly. Lift the parchment paper to remove the frozen slab. Cut into desired slices or bars.
