2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup fresh or frozen blackberries

2 tablespoons lemon juice

1 teaspoon cornstarch

1/4 cup water

Instructions
 

Prepare the Yogurt Layer:

    - In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth and well blended.

      Make the Blackberry Swirl:

        - In a small saucepan, combine the blackberries, lemon juice, water, sugar (if using), cornstarch, and a pinch of salt. Cook over medium heat, mashing the blackberries lightly until they break down and create a thicker syrup, about 5-7 minutes.

          - Remove from heat and allow it to cool slightly.

            Assemble the Mixture:

              - Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal later.

                - Pour half of the yogurt mixture into the prepared baking dish, smoothing it into an even layer.

                  Add the Blackberry Mixture:

                    - Drizzle half of the blackberry sauce over the yogurt layer. Use a knife or skewer to gently swirl the blackberry sauce into the yogurt, creating a marbled effect.

                      Finish Layering:

                        - Pour the remaining yogurt mixture over the first yogurt-blackberry layer, smoothing it out again. Drizzle the rest of the blackberry sauce on top and swirl again for a lovely pattern.

                          Freeze:

                            - Cover the dish with plastic wrap or foil and place it in the freezer. Freeze for at least 4 hours or until completely solid.

                              Serve:

                                - Once frozen, lift the slab out of the baking dish using the parchment paper. Cut into squares or bars.

                                  - Serve immediately or store in an airtight container in the freezer.
