Frozen Yogurt Biscoff Cookie Balls

Ingredients
  

1 cup plain Greek yogurt

1/2 cup Biscoff cookie spread

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup crushed Biscoff cookies (plus extra for coating)

Pinch of salt

Optional: 1/2 cup mini chocolate chips or chopped nuts for added texture

Instructions
 

In a large mixing bowl, combine the plain Greek yogurt, Biscoff cookie spread, honey, and vanilla extract. Mix until the ingredients are thoroughly combined and smooth.

    Add a pinch of salt and the crushed Biscoff cookies to the yogurt mixture. If you’re using mini chocolate chips or nuts, fold them in at this stage for extra texture. Stir until everything is evenly incorporated.

      Using your hands, scoop out a spoonful of the mixture and roll it into bite-sized balls (about 1 inch in diameter). Place the balls on a parchment-lined baking sheet.

        Once all the mixture is rolled into balls, you can optionally coat them in additional crushed Biscoff cookies for a tasty crunch. Do this by rolling each ball in the crushed cookies until well-coated.

          Freeze the cookie balls for at least 2-3 hours, or until they are firm and ready to enjoy.

            When ready to serve, remove the cookie balls from the freezer and let them sit for a few minutes before enjoying. This will make them softer to bite through.

              Store any leftovers in an airtight container in the freezer for up to two weeks.
