2 cups fresh strawberries, hulled and sliced

1 tablespoon honey or maple syrup (adjust based on sweetness preference)

1 teaspoon lemon juice

1 cup plain Greek yogurt (or your favorite yogurt)

½ teaspoon vanilla extract

Optional: ¼ cup granola or crushed nuts for added crunch

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, honey (or maple syrup), and lemon juice. Gently mash the strawberries with a fork or potato masher to release some juices, but leave some chunks for a delightful texture.

    Mix the Yogurt: In a separate bowl, mix the Greek yogurt with the vanilla extract until smooth and creamy.

      Layer the Pops: Take your popsicle molds and start layering. Add a spoonful of the strawberry mixture into the molds, followed by a layer of yogurt. Alternate between the strawberry and yogurt layers until the molds are filled, leaving a bit of space at the top for expansion when freezing.

        Add Crunch (Optional): If using granola or crushed nuts, sprinkle a bit on top of the final yogurt layer for added texture.

          Insert Sticks: Place the popsicle sticks into the molds, ensuring they're centered and stable.

            Freeze: Carefully place the molds in the freezer and freeze for at least 4-6 hours or until completely solid.
