Ingredients

2 cups fresh or frozen strawberries, thawed and diced

2 tablespoons honey or maple syrup

1 cup granola (preferably a crunchy variety)

1 cup Greek yogurt (plain or vanilla)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Mini cupcake liners or silicone molds

Instructions

Prepare the Strawberries: In a medium bowl, combine the diced strawberries, honey (or maple syrup), and lemon juice. Stir gently and let sit for about 10 minutes to release the juices and allow the flavors to meld.

Make the Greek Yogurt Mixture: In another bowl, mix the Greek yogurt with vanilla extract. Stir until well combined and creamy. Set aside.

Layer the Cups: If using mini cupcake liners, place them on a baking sheet for easy handling. Start by adding a spoonful of the strawberry mixture at the bottom of each liner, followed by a layer of Greek yogurt. Then, sprinkle a layer of granola on top. Repeat the layering process until the cups are filled, finishing with a layer of granola on top.

Freeze the Cups: Place the tray of prepared cups into the freezer and let them freeze for at least 4 hours or until completely firm.

Serve: Once frozen, gently peel the liners off (if using cupcake liners) and enjoy your Frozen Strawberry Crunch Cups immediately! These can be kept in the freezer for up to 2 weeks—simply let them sit out for a minute or two before enjoying for easier eating.
