Ingredients

2 cups fresh or frozen raspberries

1 cup Greek yogurt (plain or vanilla flavored)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract (optional)

A pinch of salt

Instructions

Prep the Raspberries: If using fresh raspberries, gently rinse and pat dry. If using frozen, thaw them completely and drain excess liquid.

Mash the Raspberries: In a mixing bowl, mash the raspberries with a fork until they are mostly broken down, but still have some chunks for texture.

Mix the Yogurt: In a separate bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir well until smooth.

Combine: Gently fold the mashed raspberries into the yogurt mixture, being careful not to over-mix. You want to see swirls of raspberry throughout the yogurt.

Drop the Mixture: Line a baking sheet with parchment paper. Using a teaspoon or a small cookie scoop, drop spoonfuls of the raspberry yogurt mixture onto the prepared baking sheet, spacing them about an inch apart.

Freeze: Transfer the baking sheet to the freezer and freeze for about 2-3 hours or until the yogurt drops are completely solid.

Store: Once frozen, carefully remove the raspberry yogurt drops from the parchment paper and store them in an airtight container in the freezer. Enjoy them as a refreshing snack!
