Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (or almond butter)

1/4 cup honey or maple syrup

1/2 cup dark chocolate chips (vegan if desired)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/4 cup shredded coconut (optional)

1/2 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Base: In a large mixing bowl, combine rolled oats, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix thoroughly until the ingredients form a sticky mixture. Using a spatula or your hands will help combine everything evenly.

Add Extras: Fold in the chocolate chips, chopped nuts, and shredded coconut (if using) into the oat mixture. Make sure they are well-distributed throughout the mixture.

Shape the Clusters: Use a tablespoon to scoop out the mixture and drop it onto a parchment-lined baking sheet. You can shape them into small clusters or balls, depending on your preference.

Freeze: Once all the clusters are formed on the baking sheet, place them in the freezer for about 1 to 2 hours or until they are solid.

Store and Serve: After freezing, transfer the clusters to an airtight container or freezer bag. Store them in the freezer for up to a month. Enjoy them straight from the freezer for a quick snack or dessert!
