Frozen Peach Melba Popsicles

4 ripe peaches, peeled and chopped

1 cup fresh raspberries

1/2 cup honey or maple syrup (more or less, depending on the sweetness of the fruit)

1 cup plain Greek yogurt

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Extra raspberries and chopped peaches for layering (optional)

Instructions
 

Prepare the Peaches: In a blender, puree the chopped peaches until smooth. If you’d like, reserve a small amount of diced peaches for later use.

    Make the Raspberry Sauce: In a separate bowl, mash the fresh raspberries with a fork. Stir in 1 tablespoon of honey or maple syrup (add more if desired) and set aside.

      Mix Yogurt Layer: In another bowl, combine the Greek yogurt, vanilla extract, lemon juice, and a pinch of salt. Mix well until smooth and creamy. Adjust the sweetness with honey or maple syrup as per your taste.

        Layer the Popsicles: In a popsicle mold, pour a layer of the peach puree until it fills 1/3 of the mold. Insert into the freezer for about 30 minutes to set slightly.

          Add Raspberry Sauce: Once the peach layer is set, add a layer of the raspberry sauce on top. If you reserved any diced peaches, sprinkle them over this layer for added texture.

            Finish with Yogurt Layer: Finally, spoon the yogurt mixture on top of the raspberry layer, leaving a little space at the top of the mold for expansion during freezing.

              Insert Sticks: Place the popsicle sticks into the molds and freeze for at least 4-6 hours, or until the popsicles are completely solid.

                Unmold the Popsicles: To release the popsicles, run warm water over the outside of the molds for a few seconds. Carefully pull the popsicles out and enjoy!
