Ingredients

2 cups frozen peaches (about 2 ripe peaches, peeled and chopped, then frozen)

1 cup prosecco or sparkling wine, chilled

1/2 cup peach nectar

1 tablespoon fresh lemon juice

1 tablespoon honey or agave syrup (optional, for sweetness)

Fresh mint leaves, for garnish

Extra peach slices, for garnish

Ice cubes (optional, for a thicker slushie)

Instructions

Prepare the Peaches: If you haven't done so already, peel and chop ripe peaches, then freeze them for at least 4 hours or overnight until solid.

Blend the Ingredients: In a blender, combine the frozen peaches, chilled prosecco, peach nectar, fresh lemon juice, and honey or agave syrup (if using). If you prefer a thicker slushie consistency, you can add a handful of ice cubes.

Blend Until Smooth: Pulse the mixture until it becomes smooth and slushy. You may need to pause and scrape down the sides of the blender to ensure everything is mixed well.

Taste and Adjust: Taste the slushie, and adjust sweetness if necessary by adding a little more honey or syrup, then blend again.

Serve Immediately: Pour the frozen peach bellini slushies into chilled glasses.

Garnish: Garnish each glass with fresh mint leaves and extra peach slices for a refreshing touch.

Enjoy the Bliss: Serve immediately with a straw or a spoon, and enjoy this frosty, boozy treat!
