Ingredients

1 ½ cups of graham cracker crumbs

½ cup unsalted butter, melted

2 cups powdered sugar

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 teaspoon lemon zest

1 (14 oz) can sweetened condensed milk

1 (12 oz) tub of whipped topping (thawed)

Lemon slices and mint leaves for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press this mixture into the bottom of a 9-inch pie dish to form an even crust. Set aside.

Make the Filling: In a separate large bowl, whisk together the powdered sugar, lemon juice, and lemon zest until all ingredients are fully combined.

Combine with Condensed Milk: Add the sweetened condensed milk to the lemon mixture, and stir until smooth and creamy.

Fold in Whipped Topping: Gently fold the thawed whipped topping into the lemon mixture using a spatula. Be careful not to deflate the whipped topping. Mix until just combined.

Assemble the Pie: Pour the lemon filling into the prepared graham cracker crust, smoothing the top with a spatula.

Freeze: Cover the pie with plastic wrap and place it in the freezer for at least 4 hours, or until completely set.

Serve: Once set, remove the pie from the freezer and garnish with fresh lemon slices and mint leaves before slicing. Enjoy your refreshing treat!
