To create the perfect yogurt base for your Frozen Lemon Raspberry Yogurt Coins, you’ll want to start with quality yogurt. Full-fat Greek yogurt works wonders for its creamy texture and tangy flavor, but you can also opt for non-dairy yogurt alternatives if you're catering to dietary preferences. In a mixing bowl, combine 2 cups of yogurt with 1/4 cup of honey or maple syrup. Adjust the sweetness to your preference, but keep in mind the tartness of the raspberries and lemons will balance the flavors beautifully.

Ingredients

1 cup plain Greek yogurt

1/2 cup fresh raspberries (or frozen, thawed)

1/4 cup honey or maple syrup

Zest of 1 lemon

2 tablespoons fresh lemon juice

Pinch of salt

Optional: additional raspberries and lemon zest for garnish

Instructions

Prepare the Raspberry Mixture: In a blender or food processor, combine the fresh raspberries, lemon juice, and honey (or maple syrup). Blend until the mixture is smooth but still has some raspberry bits for texture. Set aside.

Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, lemon zest, and a pinch of salt. Stir until the mixture is fully combined and creamy.

Layer the Mixtures: Line a baking sheet with parchment paper. Using a spoon or a piping bag, drop small dollops (about 1 tablespoon) of the yogurt mixture onto the parchment, flattening each dollop slightly. Then, use the same spoon or piping bag to drop a small spoonful of the raspberry mixture on top of each yogurt dollop.

Swirl for Effect: Using a toothpick or a skewer, gently swirl the raspberry mixture into the yogurt to create a marbled effect. Be careful not to over-mix; you want to see both colors.

Freeze: Place the baking sheet in the freezer for about 2-3 hours or until the yogurt coins are completely frozen.

Serve: Once frozen, remove the yogurt coins from the parchment paper and place them in an airtight container. Optionally, garnish with additional fresh raspberries and lemon zest on top before serving.

Enjoy: Pop them back in the freezer until you’re ready to enjoy a refreshing treat!
