Ingredients

2 cups coconut yogurt (unsweetened)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup almond flour

1/2 cup sliced almonds

1 tablespoon shredded coconut (unsweetened, for topping)

Pinch of sea salt

Instructions

Prepare Your Mold: Choose a silicone mold or a mini muffin pan. Lightly grease the molds with a little coconut oil to ensure easy removal later.

Mix the Base: In a large mixing bowl, combine the coconut yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir well until all ingredients are fully incorporated and smooth.

Add Almond Flour: Gradually fold in the almond flour, mixing until it forms a thick but spreadable consistency. The dough should hold together but not be overly wet.

Fill the Molds: Spoon the yogurt mixture into the prepared molds, filling each cavity about 3/4 full to allow for expansion during freezing. Smooth the tops with the back of a spoon for an even surface.

Top with Almonds: Sprinkle the sliced almonds and shredded coconut evenly on the filled molds, gently pressing them down into the mixture to ensure they stick.

Freeze: Place the molds in the freezer for at least 4 hours, or until completely frozen and firm.

Remove and Serve: Once frozen, carefully pop the disks out of the molds. Let them sit at room temperature for a couple of minutes before serving for a slightly softer texture.

Enjoy: Serve the Frozen Coconut Yogurt Almond Disks as a refreshing snack or dessert. Store any leftovers in an airtight container in the freezer for up to 2 weeks.
