Ingredients

1 cup creamy peanut butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup dark chocolate chips

1 tablespoon coconut oil

1/2 cup crushed graham crackers (optional)

1/4 cup chopped peanuts for topping (optional)

Instructions

Prepare the Peanut Butter Mixture:

In a medium bowl, combine the creamy peanut butter, honey or maple syrup, vanilla extract, and sea salt. Stir until the mixture is smooth and well combined.

      Form the Rounds:

Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, portion out the peanut butter mixture and roll it into small balls. Place the balls onto the prepared baking sheet and flatten them slightly to form disks.

          Chill the Peanut Butter Rounds:

Place the baking sheet in the freezer and allow the peanut butter rounds to chill for about 30 minutes, or until firm.

              Melt the Chocolate:

In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth.

                  Coat the Rounds:

Dip each chilled peanut butter round into the melted chocolate, ensuring they are fully coated. Allow any excess chocolate to drip off and place the coated rounds back on the parchment paper.

                      Add Toppings (Optional):

If desired, sprinkle crushed graham crackers and chopped peanuts on top of the chocolate-coated rounds for extra texture and flavor.

                          Freeze Until Set:

Once all the rounds are coated, return the baking sheet to the freezer. Let the rounds freeze for about 1 hour or until the chocolate is completely set.

                              Serve and Enjoy:

Once set, remove the rounds from the parchment paper and enjoy your delicious frozen treats! Store any leftovers in an airtight container in the freezer for up to a month.
