1 cup plain yogurt (dairy or non-dairy coconut yogurt)

1 cup finely grated carrots

1/2 cup unsweetened shredded coconut

2 tablespoons honey or maple syrup (to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of salt

Silicone coin-shaped molds or a small muffin tin

Instructions
 

Prepare the Mixture: In a large bowl, combine the plain yogurt, grated carrots, shredded coconut, honey or maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix well until all ingredients are fully incorporated.

    Adjust Sweetness: Taste the mixture and adjust sweetness by adding more honey or maple syrup if desired. Stir again to combine.

      Fill the Molds: Carefully spoon the yogurt mixture into the silicone coin molds or muffin tin, filling each cavity to the top. Use the back of a spoon or your fingers to pack the mixture down gently.
