Frozen Berry Yogurt Cookie Sandwiches

For the Cookie Base:

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup rolled oats

1/2 cup white chocolate chips (optional)

For the Frozen Berry Yogurt Filling:

2 cups mixed frozen berries (strawberries, blueberries, raspberries, etc.)

1 cup plain Greek yogurt

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of salt

Prepare the Cookie Dough:

    - Preheat your oven to 350°F (175°C).

      - In a small bowl, whisk together the flour, baking soda, and salt. Set aside.

        - In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

          - Beat in the egg and vanilla extract until combined.

            - Gradually mix in the dry ingredients until just combined.

              - Fold in the oats and white chocolate chips if using.

                Bake the Cookies:

                  - Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.

                    - Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                      Make the Frozen Berry Yogurt Filling:

                        - In a blender or food processor, combine the frozen mixed berries, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt.

                          - Blend until smooth. Taste and adjust sweetness if needed. If the mixture is too thick, you can add a splash of water or milk to help blend.

                            Assemble the Sandwiches:

                              - Once the cookies are completely cooled, take one cookie and add a generous spoonful of the frozen berry yogurt filling on the flat side.

                                - Top it with another cookie, pressing down gently to create a sandwich.

                                  - Repeat with the remaining cookies and filling.

                                    Freeze the Sandwiches:

                                      - Place the cookie sandwiches on a baking sheet and put them in the freezer for about 2 hours or until the filling is firm.

                                        Serve:

                                          - Once the sandwiches are frozen, serve immediately or store them in an airtight container in the freezer for up to 1 month.
