Baking cookies is as much an art as it is a science. To ensure that your banana oat cookies come out perfectly baked, watch for visual cues. The edges of the cookies should be lightly golden, and the centers will appear slightly soft but not wet. If you press gently with your fingertip, they should spring back rather than leave an indentation. Allow the cookies to cool on the baking sheet for about five minutes before transferring them to a wire rack. This cooling period is essential as it allows the cookies to firm up, resulting in a delightful texture.

Ingredients

For the Cookie:

2 ripe bananas, mashed

1 cup rolled oats

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon baking powder

1/4 cup almond butter (or any nut butter of your choice)

1/4 cup dark chocolate chips (optional)

Pinch of salt

For the Filling:

1 cup Greek yogurt (or any preferred yogurt)

2 tablespoons honey or maple syrup (for sweetness)

1/2 teaspoon vanilla extract

Fresh fruit slices (strawberries, raspberries, or peaches for extra flavor, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Make the Cookie Dough: In a mixing bowl, combine the mashed bananas, rolled oats, vanilla extract, ground cinnamon, baking powder, almond butter, and a pinch of salt. Stir until all ingredients are well incorporated. If you’d like to add a bit of sweetness and indulgence, fold in the dark chocolate chips.

Shape the Cookies: Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each scoop slightly with the back of the spoon to form round cookies.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the edges are golden brown. Once done, remove from the oven and allow to cool completely on a wire rack.

Prepare the Filling: In a separate bowl, mix the Greek yogurt, honey or maple syrup, and vanilla extract until smooth. If using, fold in fresh fruit slices for added flavor.

Assemble the Sandwiches: Once the cookies are completely cool, take one cookie and spread a generous spoonful of the yogurt filling on the flat side. Top it with another cookie to form a sandwich. Repeat this process with the remaining cookies.

Freeze: Place the assembled cookie sandwiches on a tray and freeze for at least 1-2 hours to firm up.

Serve: Remove the sandwiches from the freezer a few minutes before serving for easier handling. Enjoy these delightful frozen treats on a warm day or as a healthy dessert!
