6 large eggs

1/4 cup whole milk

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 cup shredded mozzarella cheese

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Optional: a pinch of red pepper flakes for spice

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.

      Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, whole milk, salt, and pepper until well combined. Fold in the chopped basil and half of the shredded mozzarella cheese.

        Add Tomatoes: Add the halved cherry tomatoes to the skillet with the sautéed onions and garlic, stirring gently to combine.

          Combine Everything: Pour the egg mixture over the sautéed vegetables in the skillet, making sure it spreads evenly. Sprinkle the remaining mozzarella cheese on top.

            Cook on the Stovetop: Let the frittata cook on the stovetop for 4-5 minutes, or until the edges begin to set and form a light crust.
