2 medium zucchinis (spiralized into zoodles)

1 cup cherry tomatoes (halved)

1 cup fresh mozzarella balls (bocconcini)

1 cup fresh basil leaves

1/4 cup pine nuts (lightly toasted)

1/2 cup extra virgin olive oil

2 tablespoons lemon juice

2 cloves garlic (minced)

Salt and pepper (to taste)

Balsamic glaze (for drizzling)

Prepare the Zoodles: Spiralize the zucchinis using a spiralizer to create zoodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set aside.

    Make the Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, minced garlic, and a pinch of salt and pepper. Pulse until finely chopped. While processing, gradually drizzle in the olive oil and lemon juice until you reach a smooth, creamy consistency. Adjust seasoning to taste.
