4 slices of thick-cut brioche bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Salt and pepper, to taste

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Vegetable oil (for frying)

4 slices of cheddar cheese

Maple syrup, for serving

Fresh sage or arugula, for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, and a pinch of salt and pepper.

      - Submerge the chicken breasts in the marinade. Cover and refrigerate for at least 1 hour or overnight for the best flavor.

        Prepare the French Toast Batter:

          - In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt.

            Cook the Chicken:

              - Remove the marinated chicken from the fridge. In a shallow dish, place the flour and season with salt and pepper.

                - Dredge each chicken breast in the flour, shaking off any excess. Heat vegetable oil in a large skillet over medium-high heat.

                  - Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and place on a paper towel-lined plate to drain the excess oil.

                    Make the French Toast:

                      - In the same skillet, reduce the heat to medium-low. Dip each slice of brioche bread into the egg mixture, ensuring both sides are well-coated.
