For the Broth:

1 onion, halved

2-inch piece of ginger, sliced

2 stalks of lemongrass, trimmed and smashed

3 whole star anise

4 whole cloves

1 cinnamon stick

1 tablespoon of fish sauce

8 cups of chicken stock

Salt to taste

For the Chicken:

1 lb boneless, skinless chicken thighs

1 tablespoon vegetable oil

Freshly ground pepper

For the Noodles and Toppings:

8 oz rice noodles (bánh phở)

1 cup bean sprouts

1 cup fresh basil leaves

1 cup cilantro leaves

2 limes, cut into wedges

Sliced jalapeños (optional)

Instructions
 

Prepare the Broth:

    - In a dry pan, toast the halved onion and sliced ginger over medium heat until they are lightly charred and fragrant (about 5-7 minutes). This enhances the depth of the broth.

      - In a large stockpot, combine the charred onion, ginger, smashed lemongrass, star anise, cloves, cinnamon stick, and chicken stock. Bring to a simmer over medium heat.

        - Add the fish sauce and season with salt to taste. Let the broth simmer for about 30 minutes to fully develop flavors. Strain the broth to remove solids and return it to the pot.

          Cook the Chicken:

            - While the broth simmers, heat a tablespoon of vegetable oil in a skillet over medium heat. Season the chicken thighs with salt and freshly ground pepper. Cook for about 6-7 minutes per side, or until golden brown and cooked through.

              - Remove the chicken from the skillet, let it rest for a few minutes, and then slice it thinly.

                Prepare the Noodles:

                  - Cook the rice noodles according to package instructions until they are al dente. Drain and rinse under cold water to stop the cooking process.

                    Assemble the Pho:

                      - Divide the cooked noodles among serving bowls. Ladle hot broth over the noodles, ensuring to include a few slices of chicken in each bowl.

                        - Garnish the pho with bean sprouts, fresh basil, cilantro, lime wedges, and sliced jalapeños as desired.
