Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk, at room temperature

1 large egg

2 tablespoons unsalted butter, melted (plus extra for cooking)

1 teaspoon vanilla extract

Optional: maple syrup, fresh berries, or whipped cream for serving

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Prepare Wet Ingredients: In another bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined. Be careful not to over-mix; it’s okay if a few lumps remain.

Rest the Batter: Allow the batter to rest for about 5-10 minutes. This helps the pancakes become fluffier.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter.

Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

Keep Warm: Transfer the cooked pancakes to a plate and cover them loosely with foil while you cook the remaining pancakes.

Serve: Stack the pancakes high on a serving plate, drizzle with maple syrup, and top with fresh berries or whipped cream if desired.
