1 cup unsalted butter, chilled and cubed

1/2 cup plain yogurt (or sour cream)

1 tablespoon lemon juice

1/4 cup water (as needed)

Prepare the Dough: In a large mixing bowl, combine the flour and salt. Mix well to ensure even distribution.

    Incorporate the Butter: Add the chilled, cubed butter into the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs. It’s important to keep the butter cold for a flaky texture.

      Add Yogurt and Lemon Juice: Create a well in the center of the flour mixture and add the yogurt and lemon juice. Mix gently with your hands or a wooden spoon until the dough starts to come together.

        Hydrate the Dough: Gradually add water, one tablespoon at a time, mixing until the dough forms a cohesive ball. Be careful not to overwork the dough. It should be soft and slightly sticky.

          Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This firms up the butter and allows the gluten to relax, which helps achieve a flaky texture.

            Roll out the Dough: After chilling, divide the dough into 2 equal portions. On a floured surface, roll out one portion into a large rectangle about 1/8 inch thick.

              Fold the Dough: Fold the rolled-out dough into thirds like a letter (if desired, you can brush a bit of melted butter in between layers for more flakiness) and then roll it out again into a rectangle. Repeat this process two to three more times with the second portion of dough.

                Final Chill: Once you have achieved the desired layers, wrap each portion tightly and refrigerate for another 30 minutes. This final chill helps the layers set.
