1 lb boneless, skinless chicken breasts, diced

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cup cucumber, julienned

3 green onions, sliced

1 cup fresh cilantro, chopped

1/2 cup mayonnaise

3 tbsp sriracha sauce (adjust for spice preference)

1 tbsp rice vinegar

1 tbsp soy sauce

1 tbsp honey

Salt and pepper, to taste

4 large tortillas or wraps

Optional: crushed peanuts for garnish

Prepare the Firecracker Sauce: In a mixing bowl, combine mayonnaise, sriracha sauce, rice vinegar, soy sauce, honey, salt, and pepper. Mix until smooth and set aside.

    Cook the Chicken: In a large skillet over medium heat, add a splash of oil. Once hot, add the diced chicken breasts. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Season with salt and pepper to taste.

      Add Veggies: Toss in the shredded carrots and red bell pepper. Stir-fry for an additional 2-3 minutes until the veggies are slightly tender but still crisp.
